Blueberry Night Sky Bowl

You'll need

  • 1 cup unsweetened coconut milk⁠
  • 1 1/2 cups frozen blueberries⁠
  • 1 cup steamed and frozen cauliflower⁠
  • 1 scoop Otopia® Vanilla O'Fit Protein powder
  • 1 tbsp almond butter
  • 1 frozen banana⁠

To make

  1. Add all ingredients except for the topping to a high speed blender and blend until well combined, scraping down the sides and stirring as needed
  2. You want the consistency to be smooth and buttery. Continue blending, adding more almond butter and/or almond milk for thinner consistency, and a little more frozen cauliflower to thicken.⁠
  3. Spoon mixture into a bowl and top with shredded coconut, fresh blueberries or a swirl of coconut cream
