Carrot & Ginger Soup
You'll need
  • 3 to 4 large carrots (chopped small)⁠
  • 1 -2 onions (diced into small pcs)⁠
  • 1 teaspoon fresh grated ginger⁠
  • 1 1/2 teaspoon curry powder⁠
  • 1 tbspn coconut oil⁠
  • 1 3/4 cup vegetable broth⁠
  • 1 400ml can of coconut milk⁠
  • Salt to season⁠

To make

  1. Gently saute the onions in the coconut oil in a soup pot until translucent and soft. Add the ginger and curry powder and stir. Add the carrots and cover with the vegetable broth. Simmer for 20 to 25 minutes, until carrots are soft⁠
  2. Allow to cool slightly, and then puree in a blender, working in batches if needed
