- 1/4 cup golden monkfruit
- 1/4 cup olive oil
- (or you can switch out some of the olive oil for toasted sesame oil which increases the nutty flavour)
- 2 tablespoons red wine vinegar. If you don’t have it, don’t worry. Use lemon juice, cider vinegar, rice vinegar, or white vinegar instead.
- 2 tablespoons toasted sesame seeds
- 1 tablespoon coconut aminos
- Sautee prepared bok choy in a non stick pan.
- Mix the ingredients above and add at the last moment - Serve!
