Warming Carrot & Ginger Soup for the Soul

You'll need

  • Olive oil⁠
  • Chopped brown onion⁠
  • Minced ginger⁠
  • Cinnamon⁠
  • Carrots⁠
  • Vegetable broth⁠
  • Coconut milk⁠
  • Coconut cream⁠
  • Salt & Pepper to taste⁠

To make

  1. Add some chopped onion, a pinch of cinnamon and minced or grated fresh ginger to a pot with some olive oil and sauté until the onions are softened ⁠
  2. Then add in a good amount of sliced carrots and toss with the onions and ginger and then add vegetable stock⁠
  3. Bring to the boil and then lower the heat, cover the pot and let it simmer until the carrots are tender
  4. Remove from the heat and blend with an immersion blender until smooth. Add in enough coconut milk to your liking. Add salt and pepper to taste
  5. Pour into bowls and top with a little coconut cream
